The Twelve Steps To Cooking Meth


One - 6 large, fresh herrings, descaled, gutted and filleted
Two - 60g salt
Three - For the marinade
Four - 500ml cider vinegar
Five - 250ml cider
Six - 12 allspice berries
Seven - 12 black peppercorns
Eight - 6 bay leaves
Nine - 1 tbsp light brown sugar
Ten - 1 tsp mustard seeds
Eleven - Zest of 1 large orange, pared into wide strips with no pith
Twelve - 1 small onion (red or white) , very thinly sliced
