We stopped into the Chuckwagon
And oh, I’m so glad we did
For food was simmering and ready
Under the massive lids
The fragrance was incredibly great
A blend of flavors were there
We could hardly wait, folks
To look around and grab a chair
Barbeque with the perfect spices
Immersing delicious meat
Simmering for hours they were
Until so tender and sweet
Cole slaw still crunchy and fresh
With just the right spices as well
The best cooks here had gathered
Oh yes, you could instantly tell
Fried chicken all brown and crunchy
Your teeth would smile if they could
Just couldn’t get quite enough
So easy to eat more than you should
And there front and center
Was my friend, handsome Dr. John
Made me smile once more
For I always would like to go along
It was country, that’s what it was
Country through and through

Thank you Marilyn for the memories. I remember in my preteens before the dark days came, we would roast a half cow over an open pit. This took way too long in my opinion...hehehe...but it was sure good when it was done. The meat fell off of the bone, and it was juicy and tender too. They knew how to do those big roasts back then. This poem reminded of the good days; they days when I had fun; the days when I was happy. Thank you again, Marilyn for sharing this delightfully tasty poem. Love & hugs, Barbara
