Taste & Flavours Yet Unseen Poem by Mark Heathcote

Taste & Flavours Yet Unseen

It's not just a case of believing,
or having indefatigable faith
it isn't all about knowing, regardless
-of making any concrete abstractions
that you, by yourself, now can comprehend.
It's something you can taste
in your mouth like a slice of ripe watermelon
with a watering tongue
tasting the aromas of spices, cardamom
tingling's burning your eyes, yet unseen.

~or~

It's a recipe yearbook, no one
will believe wasn't written over a lifetime
regardless even of earlier pages
of a dill and feta stuffed aubergine.
It's not just a case of believing-or-having
indefatigable faith in-good-ingredients
it isn't all about knowing, regardless
-of making any concrete abstractions
that you, by yourself, can now comprehend.
It's something you can indefinably taste
in your mouth like a slice of ripe watermelon
with a wet savoring watering tongue
tasting the aromas of spices, cardamom
tingling's burning your eyes, yet unseen.
