if they want it
to sound like it does in France.
They opt for 'Louie'.

There's no go-to for Guy though:
not G-i-e as in 'Brie',
or -ey as in 'key';

not Ghee.

Only Guy.

How about 'Lewis' as an alternative to the spelling you give. It's quite common.

Not Ghee but only guy we see. Ghee is a word that indicates to special oil made from cow's milk after making and churning curd. In English people say it butter. Here we see a guy with creamy face. This poem is very brilliantly penned.
